Gluten Free Dairy Free Donuts

3 cups Gluten free flour ( I use 2 cups of a light flour  like a rice/tapioca mix and 1 cup of a heavier flour like sorghum)
1/2 cup cocoa powder
1 1/2 tsp xanthan gum
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt

2 eggs
1 tsp vanilla
2/3 cup sugar

1/3 cup rice (or other) milk
1/3 cup corn syrup (can try agave or brown rice syrup)
1/4 cup melted margarine (can use butter)

extra flour for rolling out and peanut oil or other good frying oil for cooking
powdered sugar for coating

Mix first six dry ingredients together and set aside.  Mix eggs, sugar and vanilla together in the bowl of your mixer.  Blend rice milk, corn syrup and melted margarine and add alternately with the dry ingredients to the egg mixture. Mix thoroughly, scraping often as this gets really thick and sticky. Wrap ball of dough in plastic wrap and refrigerate for half an hour.  Roll out dough on board dusted with gluten free flour to about 3/8 inch thick. Cut with donut cutter and fry one minute on a side in deep hot fat at 375 degrees. Drain on paper towels. You can coat the donuts in plain powered sugar, or make a glaze by mixing powedered sugar with enough water (or heavy cream if you can eat dairy!) to have the consistency of yogurt. Dip the donuts while still slightly warm and drain on a rack.
